Stinky when raw, it’s sweet, garlicky and comforting when fried in butter. Known in English as climbing wattle or acacia leaf, saom is called cha-om in Thailand and in Myanmar it’s su pout ywet. Saom – sometimes written sa’om – and is the feathery shoots of the senegalia pennata, which is also called acacia pennata.

Called fu yong dan or fuyong dan in Cantonese, but in English known as egg foo yung or egg fu yung, it differs from the Chinese-American egg foo young, above, a popular Chinese restaurant takeout dish of crispy pancake-like omelettes drizzled in gravy. Bacon and Egg Yaki Udon Recipe for Japanese Fried Noodles
This bacon and egg yaki udon recipe makes my idea of a deliciously-hearty Japanese-style noodle breakfast for the weekend and it was another of our 24 most popular Weekend Eggs recipes of 2024.
It takes inspiration from classic Japanese fried udon noodles and tamago kake gohan or Japanese egg on rice. The udon noodles are fried with bacon and mushrooms and served with a raw egg yolk stirred into the piping-hot noodles before eating, although you could certainly use cooked eggs.
When I concocted this, I was craving both this Korean spicy noodles recipe made with udon noodles, kimchi, bacon and eggs, and tamago kake gohan or Japanese egg on rice, but couldn’t decide which to make. I’d read that in Japan, tamago kake gohan made with European ingredients such as Italian Parma ham and Parmigiano-Reggiano has become popular, so I thought why not.
If you can eat raw eggs, make sure to use pasteurised eggs and keep eggs refrigerated to reduce the risk of possible salmonella infection from raw eggs. If you prefer to cook your eggs, we use one of these small single-egg frying pans and fry the eggs, not only to maintain the round shape, but also to control the doneness of the eggs, which you can’t do with egg rings in a larger pan.

I created this recipe after sharing a recipe for slow fried eggs atop a creamy dill spread on toasted sourdough with crunchy gherkins, crisp radishes, drizzled with extra virgin olive oil, and sprinkled with paprika, cracked pepper and sea salt.
That was a dish I concocted that was inspired by the breakfast my Russian grandfather used to each every morning. But as delicious as it was, even if I do say so myself, it was a bit fancy, so I came up with this simpler version that could be prepped quickly and easily as a filling breakfast or brunch or afternoon snack to share.

This fried eggs with chorizo and potatoes recipe for Basque style ‘messy eggs’ makes the perfect weekend hangover cure that’s made for a late breakfast after a long night of pintxos bar-hopping in the old town of San Sebastián, one of our favourite summer destinations. It also makes a warming breakfast or brunch in winter.
As usual we’ve put a twist on a fairly traditional recipe by using baby potatoes instead of slices of potato. Slices can get soggy if not handled correctly and deep-frying potatoes pieces isn’t fun for a lazy weekend breakfast or brunch.
The reason we use baby potatoes is that they cook fast, are easy to handle, and you can leave the skins on to get a little crispy in the pan. Another twist to the traditional recipe is shallow frying the potatoes in the chorizo oil, because why wouldn’t you?
Because we generally only cook for two these days, we use a little single non-stick egg frying pan. It’s not just cute as hell, it will cook an egg with crusty whites and a soft yolk in about 45 seconds on full heat.

The spice comes courtesy of fiery ’nduja, the spicy spreadable sausage from Spilinga in Italy’s southernmost province. In Calabria it’s also known as uova fra diavolo (eggs between the devil) and uova ca ’nduja (eggs with spicy Calabrian sausage).

Thai Son-in-Law Eggs Recipe for Fried Boiled Eggs with Sweet Tamarind Sauce
Our Thai son-in-law eggs recipe for kai look keuy makes golden-brown fried soft-boiled eggs with an ever-so-slightly crispy skin. They’re drizzled in a sweet and sour homemade tamarind sauce (although you could be very generous with the sauce and drown the things in it if you like) and sprinkled with fresh coriander (cilantro), spicy dried chillies, and crunchy fried shallots and crunchy fried garlic.
You may need Terence’s guide to making perfect boiled eggs (link above), as the egg whites need to be firm enough not to break or fall apart, but we still want soft yolks, so around 5 1/2 to 6 minutes is perfect. It’s also important to use a high smoke point oil, such as rice bran oil as 190˚C is close to smoke point for some oils.
Note that the reason we’re deep-frying at such a high temperature is to make the surface of the eggs golden brown while keeping the yolks soft. You can eat these on their own as a light breakfast or snack, or as the Thais do with steamed rice to make a meal out of them.

This dish is called telur petis on Java where it originates. ‘Telur’ means ‘egg’ and ‘petis’ is the shrimp paste that adds a subtle funkiness to this spicy egg curry. Made from a freshly pounded spice paste with lemongrass stalks adding fragrance and flavour to the spicy gravy, we recommend using a mortar and pestle to pound the paste. It really doesn’t taste the same prepared in a blender.

Our best advice if you’re just starting on your tamagoyaki adventure is to buy a tamagoyaki pan. There are so many tamagoyaki pans out there that Amazon has a dedicated page explaining the types of Tamagoyaki pans on the market. We found a small tamagoyaki pan in our Japanese recycle shop here in Siem Reap that’s perfect for a one-person omelette measuring 10 cm wide x 15 cm long. It’s still listed on the Amazon Japan shop, but, really, it’s too small, even though we continue to use it.
If you’re buying your first Japanese rolled omelette pan, we recommend buying an entire tamagoyaki kit with a brush for the oil for the pan and – most importantly – a silicone spatula with which to roll the omelette. It makes a great Christmas gift for egg-lovers!
