This quick and easy breakfast tostadas recipe with fried eggs makes crispy Mexican tostadas topped with gently-spiced refried beans, fried eggs and homemade pickles, along with dollops of tomato salsa, sliced green chillies or jalapeños, crumbly Mexican cotija, and sprigs of fresh coriander. This easy breakfast tostadas recipe with fried eggs came about because we spotted a new arrival in our Siem Reap supermarket of crunchy tostadas made in Mexico and we quickly bought a whole lot of packets before they sold out. Which is what we have to do here as deliveries of imported products arrive in sporadic waves.

If you’ve eaten tostadas in Mexico, then you’ll know that once you’ve spread on some warm refried beans or piled on a couple of spoonfuls of a hot chilli con carne, that the tostada softens a tad, and magically only softens enough so that you can fold it without it getting soggy. If you think they might get too soft, double up and use two tostadas.

We only have a few tips to how to make this quick and easy breakfast tostadas recipe with fried eggs, pickles, and so on, as this is one of our simplest Weekend Eggs recipes ever.

If you’re like me and you prefer your fried eggs to be perfectly round and the yolks soft and runny yet the whites cooked, then you need this adorable little non-stick egg frying pan which is perfect for frying one egg at a time. We use it every day.

Each egg only takes a couple of minutes to cook and if you slow-fry the eggs on low heat they’ll cook evenly so that the whites will be firm but the egg yolks still runny.

If you don’t have one of those cute little pans, or you’re feeding a crowd, then by all means use your favourite cast iron skillet or non-stick French skillet. If you like your fried eggs formed into perfect circles so they neatly fit on top of the tostadas, then use egg rings.

For this easy breakfast tostadas recipe with fried eggs, we use canned refried beans, to which I add chilli powder, dried cumin and dried coriander, however, you could make your own refried beans or even use some leftover chilli con carne or vegetarian bean chilli.

Garnish with whatever you like: pickles, salsa, chillies or jalapeños, Mexican cotija, and sprigs of fresh coriander (or cilantro to our American readers).

We make our own homemade tomato salsa, quick-pickled pink shallots or onions, Mexican escabeche and jalapeno pickles, but by all means use store-bought.

This makes 4 tostadas, but spread the refried beans more thinly and you could easily make 6 or even 8 tostadas. Enjoy!

Breakfast Tostadas Recipe with Fried Eggs, Refried Beans and Pickles

This quick and easy breakfast tostadas recipe makes crispy Mexican tostadas topped with gently-spiced refried beans, fried eggs and homemade pickles, along with dollops of tomato salsa, sliced green chillies or jalapenos, crumbly Mexican cotija, and sprigs of fresh coriander. It’s very versatile, so add avocado, grated cheddar, sour cream or whatever you wish.

Ingredients
  

  • 4 tostadas
  • 450 g refried beans
  • 1 tsp chilli powder
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • 1 tsp extra virgin olive oil
  • 4 eggs

Instructions
 

  • Distribute the tostadas between plates.
  • To a pot over medium heat, add olive oil, refried beans, chilli powder, ground cumin and ground coriander, stir vigorously to combine, cook until hot, then spread the refried beans over the tostadas.
  • Pour the olive oil into a non-stick pan – just enough to coat it – crack the eggs into egg rings and fry the eggs until the whites are set and yolks still soft, then slide a fried egg onto each bean-topped tostada.
  • Garnish each fried egg with tomato salsa, pickled shallots, pickled purple cabbage, sliced green chillies or jalapenos, Mexican cotija or crumbly white cheese, and fresh coriander (not too much as it will be challenging to eat) and serve immediately.

  1. Found some tostadas in our local Mexican grocer. I’d never had them before! In some ways they’re better than soft tacos as they’re less messy to eat. This was a great recipe to start with – simple and delicious.

  2. Hi Brad, oh that’s so cool to hear! I’m so pleased you enjoyed them. Make sure to use your packets of tostadas before the expiry date. We managed to get hold of some from our supermarket, which were also Mexican made. They were such a rare find that I didn’t want to use them all up at once. By the time I got to the second packet, the tostadas were stale and very unpleasant tasting, and could not be revived in the oven like corn chips can be. I’m too scared to open the third packet! Thanks for dropping by!
