This collection of our 22 most popular egg recipes of 2022 from Weekend Eggs are the egg recipes that were the most searched-for and most-read in 2022. We usually only share our best Christmas recipes at this time of year and we wait for the more relaxed period between Christmas and New Year to analyse our stats and share our top recipes and stories of the year. This year I decided to starting share our most popular recipes of 2022 now in case you were looking for extra holiday cooking inspiration.

I’ll still be sharing festive recipes between now and Christmas, but I’ll be mixing them up with our annual reviews, and some new recipes we still have to publish, and we have other plans for that holiday week between Christmas and New Year, so make sure to check back then.

If you’re visiting us for the first time, this compilation of our 22 most popular egg recipes of 2022 are from our 13 year-old Weekend Eggs series of recipes for quintessential egg dishes from around the world, which we launched with Grantourismo back in 2010 with our year-long global grand tour focused on slow, local and experiential travel.

Not all of our Weekend Eggs recipes are eggs dishes, some are dishes with eggs. This comforting Russian buckwheat kasha recipe with caramelised onions, bacon lardons, pan-fried mushrooms, and soft-boiled eggs, makes my take on my Russian-Ukrainian grandmother’s dish.

After Putin invaded Ukraine, I was certain nobody would be searching for Russian recipes, and despite my mixed heritage, I put a planned cookbook of family recipes on hold.

I was mistaken. Beef Stroganoff topped our list of most-read recipes off 2022 and this kasha or grechka, a savoury porridge, was next on the list of 22 most popular egg posts of 2022.

Full English Breakfast Recipe for a One-Pan British Fry-Up

Our full English breakfast recipe makes a one-pan British fry-up for two or even three or four to share – although if famished you could certainly try tackling this on your own.

A traditional English breakfast consists of a plate of fried eggs, baked beans, fried bacon, mushrooms, tomatoes, sausages, and black pudding. Our take on the classic English fry-up is finished in a Dutch oven shakshouka-style.

When we launched Grantourismo on New Year’s Day 2010 with a year-long global grand tour aimed at promoting slow, local and experiential travel, we settled into places with kitchens for two weeks at a time.

This egg drop soup recipe made an egg flower soup like our families favourite Chinese restaurants did when we were kids – a velvety yellow soup so dense with creamy egg wisps it was almost like a liquid omelette. I add slender slices of shitake mushrooms, a drizzle of sesame oil, pinch of white pepper, and a sprinkle of spring onions.

Our crab omelette recipe is next on our list of 22 most popular egg recipes of 2022 and it’s no surprise. It’s appeared on our lists of most-read egg posts since Terence launched Weekend Eggs, the Asian Edition with this recipe back in 2016.

Next on the list of 22 most popular egg recipes of 2022 is this eggs potatoes and chorizo breakfast skillet recipe for our take on an American breakfast classic, the country skillet breakfast – or cowboy skillet breakfast or farmer’s skillet breakfast – cooked in a cast iron skillet.

Although there’s an infinite array of variations on the traditional breakfast skillet recipe – additions include anything from bell peppers to kidney beans – the essential ingredients of the classic skillet breakfast are eggs, potatoes, onions, cheese, and bacon or ham.

We prefer to make this hearty American breakfast with spicy chorizo sausage instead of bacon and ham, and specifically the soft Mexican chorizo rather than the harder Spanish-style chorizo.

One of our favourite cabbage recipes, this classic okonomiyaki recipe makes the umami-packed Japanese cabbage pancakes that are completely addictive, so it was no surprise that these plump savoury pancakes landed on our list of 22 most popular egg recipes of 2022.

Served at teppanyaki restaurants where they’re made old-school style on the teppanyaki grill, you’ll also spot them on menus at Japanese izakayas, casual taverns where the food is served to soak up the booze, where, while heartier, they’re presented with more finesse.

Our Japanese comfort food recipes proved very popular with readers this year and our katsudon recipe makes one of the most deliciously-comforting donburi or rice bowl meals.

This katsudon recipe makes a crunchy Japanese pork cutlet, cooked in eggs and spring onions, served atop a bowl of rice and sprinkled with slices of scallions, and it was another of our 22 most popular egg recipes of 2022.

The name ‘katsudon’ is derived from ‘katsu’, which means ‘cutlet’, and in this case, ‘tonkatsu’ (pork cutlet), and ‘don’ from ‘donburi’, a Japanese rice bowl. Katsudon is completely addictive, so don’t be surprised if you polish it off in one sitting, though you’d be better off saving some for leftovers.

Mexican Chilaquiles Recipe with Fried Eggs, Shredded Chicken and Green Salsa for Chilaquiles Verdes

My easy Mexican chilaquiles recipe with fried eggs, shredded chicken and green salsa makes chilaquiles verdes was inspired by the chilaquiles I became addicted to at Café la Blanca in Mexico City many years ago, and it was yet another of our 22 most popular egg recipes of 2022.

A beloved Mexican dish eaten for breakfast, brunch, lunch, dinner or supper in Mexico, chilaquiles was created to use up day-old tortilla chips and other leftovers, and is a very versatile dish. It’s also a popular Mexican hangover cure.

Mexican chilaquiles – homemade tortilla chips called totopos, created from frying stale corn tortillas, which are then cooked in salsa, and served with Mexican cotija and crema – is a pre-Hispanic Aztec dish. Chilaquiles – pronounced chee-lah-KEE-lehs – comes from a Nahuatl word that meant ‘chillies and greens’.

Thai Pad Kra Pao Recipe for Stir Fried Ground Pork and Holy Basil with Fried Egg

Our Thai stir-fried minced pork with holy basil recipe makes a staple of street food stalls in Thailand that’s a Thai food favourite with locals and foreigners alike, and it was another of our 22 most popular egg recipes of the year.

A garlic and chilli paste is mixed with pork mince and a rich sauce before being served with fragrant and refreshing Thai holy basil and a fried egg. To top it off, a classic Thai condiment, prik nam pla, further enhances the flavour of this popular Thai street food dish when served with steamed jasmine rice.

This Thai pad kra pao recipe is very versatile. Thai holy basil is essential – that’s the ‘kra pao’ in the title, also written as ‘kra pow’ and ‘gaphrao’, while ‘pad’ or ‘phat’ is ‘stir-fried’ – however, you could easily use ground beef or chicken mince, and you can crank up the heat if you like things hot or serve a more gently spiced stir-fry if you prefer.

Traditional Burmese Egg Curry Recipe for a Myanmar Breakfast Favourite

This traditional Burmese egg curry recipe makes a Myanmar curry shop staple that’s typically eaten for breakfast. I adapted it from the modestly printed Cook and Entertain the Burmese Way (1978) by Mi Mi Khaing, my favourite Burmese cookbook.

Served with a spicy tomato and onion-based curry, the boiled eggs are peeled and deep fried in turmeric until golden, which is why you’ll also see this called a Burmese golden egg curry recipe in some Burmese cookbooks.

Mi Mi Khaing explains that one of the “distinguishing characteristic of Burmese curries is the good amount of oil (peanut oil and sesame oil) used. At the end of making one of these curries, is the final separation of the oil from the gravy.”

While this may be disconcerting to the health conscious, the Burmese only eat a small amount of these curries compared to the amount of rice consumed and there’s always a salad or cooked vegetables and relishes on the table to provide balance.

Korean Spicy Noodles Recipe for Stir-Fried Udon with Kimchi, Bacon and Fried Eggs

If you’re a lover of Japanese udon noodles but prefer the spice of Korean food, you’re going to love this Korean spicy noodles recipe for stir-fried udon noodles with kimchi, bacon, pork, and fried eggs, another of our 22 most popular egg recipes of 2022.

It’s a dish for pork lovers as much as lovers of noodles and spice. Although if bacon and ground pork is too much pork, omit one. This versatile noodle dish also works with seafood, chicken, pork, or vegetables.

For spice lovers, the heat comes courtesy of spicy kimchi (fermented cabbage), the spicy Korean chilli paste called gochujang, and the Korean chilli flakes called gochugaru. Don’t skip the garnishes, especially the sesame seeds to add crunch and texture.

Red Chilaquiles Recipe with Fried Eggs for Chilaquiles Rojos con Huevos Fritos

This classic Mexican red chilaquiles recipe with fried eggs for chilaquiles rojos con huevos fritos will make you another one of Mexico’s fantastic, filling comfort foods, popularly eaten for breakfast, but which can really be eaten at any time of day.

Homemade tortilla chips – called totopos – are made from stale corn tortillas, which are cut into triangles and fried, then cooked in a salsa, plated up, sprinkled with Mexican cotija cheese (available on Amazon), doused in Mexican crema, and, if you like (we like!), topped with a runny fried egg – or your egg of choice.

Dished out simply back in the day, in a rustic fashion you might call ‘home-style’, with little else except perhaps some raw onion slices and refried beans (frijoles) on the side, these days modern chilaquiles might feature avocado slices, fresh coriander (cilantro), Mexican pickles, and sliced chillies. We serve our chilaquiles with the lot.

Egg Foo Young Recipe for the Cantonese Crispy Omelette

Another of our 22 most popular egg recipes of 2022, this egg foo young recipe will make you the wonderful Cantonese crispy filled omelette from Southern China, that’s also popular in Hong Kong, that was traditionally filled with char sui pork, spring onions and bean sprouts.

Called fu yong dan or fuyong dan in Cantonese, but in English known as egg foo yung or egg fu yung (and a handful of other variations on both of those spellings), this egg foo young recipe differs from the Chinese-American egg foo young, a popular Chinese restaurant takeout dish of crispy pancake-like omelettes drizzled in gravy.

Kerala Egg Curry Recipe for a South Indian Boiled Egg Curry

Our Kerala egg curry recipe will make you Kerala’s quintessential breakfast dish, a gently-spiced boiled egg curry from Southern India that’s typically eaten with Malabar parottas or paratha, a delightfully chewy and flaky flatbread, or idiyappam, steamed rice noodles. It was another of our 22 most popular egg recipes of 2022.

This recipe calls for coconut oil, but if you can’t source it opt for a neutral vegetable oil. You’ll need to fry the mustard seeds, cinnamon stick, cardamom pods, and crushed peppercorns in the oil to wake up the spices. You’ll also need a mortar and pestle to gently pound the ginger and garlic.

This classic Australian mashed avocado toast recipe with poached eggs makes you one of Australia’s most quintessential Aussie café breakfast dishes – ‘smashed avo on toast’. Just add a side of generously buttered sourdough toast, a jar of Vegemite, a tumbler of freshly squeezed orange juice (‘OJ’), and good coffee.

This recipe makes the mashed avocado on toast that was an Australian café standard when I was working at cafés during my first two years at university in Sydney in the mid-1980s, well before Granger put avocado toast on the menu at Bill’s in 1993.

Jammy Soft-Boiled Eggs on Sourdough with Dill Cream Cheese and Homemade Pickles

I was so chuffed to see this recipe for jammy soft-boiled eggs on sourdough with dill cream cheese and pickles land on this list of our 22 most popular egg recipes of 2022.

I created this recipe after sharing a recipe for slow fried eggs atop a creamy dill spread on toasted sourdough with crunchy gherkins, crisp radishes, drizzled with extra virgin olive oil, and sprinkled with paprika, cracked pepper and sea salt.

That was a dish I concocted that was inspired by the breakfast my Russian grandfather used to each every morning. But as delicious as it was, even if I do say so myself, it was a bit fancy, so I came up with this simpler version that could be prepped quickly and easily as a filling breakfast or brunch or afternoon snack to share.

Irish Colcannon Recipe with Fried Egg and Crispy Bacon

Our Irish colcannon recipe with fried egg and crispy bacon makes what we’re calling an Irish breakfast colcannon – or Irish brunch colcannon if you like, as it’s very filling – and it was another of our 22 most popular egg recipes of 2022.

It makes a deliciously-rich traditional Irish colcannon dish of mashed potatoes with butter, milk, cabbage, spring onions, and bacon, and we top the colcannon with a fried egg and crispy bacon

Terence’s ancestry is a mix of Irish and German, but when we concocted this recipe together during a week of Irish recipes we shared during the week of St Patrick’s Day, it partly came from a place of missing the Irish friends we worked with in the UAE many years ago.
