10 Most Popular Recipes of February – Pork Ribs, Chicken Cutlets, Asian Omelettes

Our 10 most popular recipes of February 2023 include a combination of new recipes, such as our recipes for sticky Asian pork ribs, Italian potato salad and Italian green beans; old recipes, such as our authentic beef Stroganoff recipe and Cambodian fish amok recipe; as well as recipe collections, from our best chicken cutlet recipes to hearty Sunday dinner recipes.

As regular visitors to Grantourismo know, I really look forward to this time of the month when I get to sit down and review our stats to see what you searched for on the site and the recipes where you spent most of your time, which we hope were recipes you cooked, or at least bookmarked to cook.

As it appears you enjoy these monthly reviews too – our 10 Most Popular Recipes of January 2023 just missed out on making this top 10 most popular recipes list – we’ll be continuing this series in 2023.

Last year I excluded a lot of our decade-old recipes that kept landing on these lists time and time again, such as Terence’s heavenly côte de bœuf recipe, which chef Pierre Gagnaire shared with us when we met up with him in Paris in 2010, and Terence’s tomato bredie recipe from Cape Town, and rabo de toro oxtail stew from Jerez, both from that year.

Those older recipes were created for Terence’s series called The Dish, in which he cooked and shared recipes for the quintessential dishes of each of the places we settled into for two weeks at a time on the 2010 yearlong global grand tour that launched Grantourismo. Those recipes land on our annual best recipe lists year after year.

But I decided to leave those older recipes in these lists this year, simply for the fact that they are so popular. If new readers discover them from these compilations, then more of you get to cook them and enjoy them. I’ll only exclude them again if that’s all these recipe collections include as that would get boring.

What’s really interesting is that a lot of the most-read recipes this month, like last month, are round-ups of other recipes, so it’s not so much 10 recipes as such but 10 recipe posts, but I’m being pedantic, and please don’t ask me to do the math.

These are the 10 most popular recipes of February 2023 on Grantourismo – the recipes our readers searched for, spent time on, and (hopefully!) cooked this month.

Easy Weeknight Dinners – Midweek Meals We Put on Repeat

This round-up of easy weeknight dinners – the midweek meals we put on repeat week after week – topped our list of 10 most popular recipes of February 2023. Or rather, recipe posts, as there are a few recipe collections among them. Please don’t ask me to do the math.

Our midweek dinner favourites that are on rotation include deliciously comforting dishes such as Japanese tonkatsu, Thai pad kra pao, a Burmese chicken curry, Sichuan-inspired bang bang chicken salad, and a Tex-Mex style chilli con carne.

When we’re not eating the dishes that we’ve been testing for the cookbooks that we’re developing or the dishes we’ve photographed for recipes we’ve published here on Grantourismo, we tend to cook these dishes, as we know they’re going to be delicious, foolproof and reliable.

But I have to say that while they’re easy dishes to make – even the tonkatsu that is brined and dredged; the more you make a dish the simpler it becomes to make – a few of the dishes take time. The curry and chilli, for instance, will only improve the longer you leave them. But once they’re on, they only require the occasional stir.

Sticky Asian Pork Ribs Recipe

This sticky Asian pork ribs recipe came in at #2 on our list of 10 most popular recipes of February 2023. Terence’s recipes makes deliciously addictive Chinese style baked ribs that are a whole lot faster than most Asian roast pork ribs recipes.

Terence brines the pork ribs first, which helps tenderise the meat and keeps the pork succulent, while also making the cooking time over a grill quite short. They can also be reheated and will remain moist.

Here in Cambodia we often eat the pork ribs simply with stir-fried morning glory and steamed rice but traditionally they’d be eaten as one of an array of dishes as part of a shared family-style meal.

That might include fried spring rolls, dumplings, fried rice, Chinese leafy greens, and a stir-fry or braise, such as Cambodian cashew chicken or Vietnamese braised pork belly.

Authentic Beef Stroganoff Recipe for a Retro Classic

It’s no surprise to see my authentic beef Stroganoff recipe land on this list at #3 of our 10 most popular recipes of February 2023 as it’s been one of the most popular recipes on Grantourismo since I first published it.

Best known as a retro classic of the 1970s, beef Stroganoff is an old aristocratic Russian dish that is rich in history. Democratised and popularised in the cafeterias of the Soviet Union, beef Stroganoff travelled the world with Russian émigrés, exiles and World War II refugees, including my Russian grandfather and Ukrainian grandmother.

One of my best Stroganoff recipes –  I also have recipes for chicken Stroganoff, mushroom Stroganoff, meatball Stroganoff and pork Stroganoff – beef Stroganoff is fantastic with traditional Stroganoff sides such as crispy shoestring fries, mashed potatoes or buckwheat kasha, and a crisp garden salad, homemade dill pickles and sour cream.

Dishes are rarely eaten alone when a Russian-Ukrainian family gathers. For our Sunday meals and holiday feasts, baboushka would prepare a whole spread of dishes, such as borscht, piroshki, Russian pelmeni and Ukrainian vareniki, stuffed cabbage rolls, a beetroot potato salad, and chicken kotleti.

Chicken Cutlet Recipes from Chicken Schnitzel to Chicken Parma

This collection of our best chicken cutlet recipes for breaded chicken cutlets came in at #4 on this list of our 10 most popular recipes of February 2023. If you’re a lover of chicken cutlets best to bookmark this post as we have plans to add more recipes to it soon.

The compilation include recipes for everything from a chicken schnitzel recipe for moist, tender chicken fillets with a crunchy panko breadcrumb coating with lemon zest and parmesan to a chicken parmigiana recipe for succulent chicken breast fillets with a breadcrumb coating, topped with a rich tomato sauce and melted parmesan cheese and mozzarella.

When I decided to pull this collection together as our compilation of best fried chicken recipes proved so popular with our readers last week, I was doing it for your convenience as much as our own, and had no idea how popular it would become.

These chicken cutlet recipes will make you classic dishes that are as comforting as they are delicious, especially when paired with sides such as creamy mashed potatoes, warm potato salad or a crisp garden salad.

Hearty Sunday Dinner Ideas from Beef Stews to Beef Curries

This post on our hearty Sunday dinner ideas landed at #5 on your 10 most popular recipes of February 2023. It’s essentially a compilation of meaty recipes and includes everything from comforting beef curries to warming beef stews.

We’ve also got recipes for a richly-spiced Thai Massaman beef curry from Southern Thailand and an easy beef kofta recipe for mouthwatering Lebanese kafta, and more.

The collection is the latest edition of another fairly random series of best Sunday night dinner ideas, which I pull together from the Grantourismo recipe archives, where we have many hundreds of recipes filed.

One of my favourite recipes in that round-up is Terence’s Spanish rabo de toro oxtail stew from Jerez in Southern Spain, which makes a classic slow braised dish that requires a long cooking time but rewards with rich, robust flavours. Terence makes it in a Dutch Oven but you could do it in a pressure cooker.

What to Cook This Week – Thai Red Curry, Mexican Tortilla Soup, Spanish Garlic Shrimp

Our What to Cook this Week series, which is essentially a compilation of five recipes for easy weeknight meals, has proved to be another one of our most popular recipe series, but this edition has so far been the most popular, landing at #6 on our 10 most popular recipes of February 2023.

This edition of What to Cook this Week included recipes for our easy cauliflower cabbage potato soup recipe, a Thai meatball red curry, Mexican tortilla soup and authentic guacamole, Spanish garlic shrimp, and a collection of recipes for romantic Valentines Day dinners (which you could bookmark for next year).

I adore all of those recipes, but I really love the cauliflower cabbage potato soup recipe, which makes a creamy vegetable soup that’s incredibly rich and comforting. You could enjoyably slurp it as is on a chilly late winter or or autumn/fall evening, dunking toast into the silky broth, or add texture by sprinkling on some crushed homemade croutons.

My next favourite recipe in that collection is probably the Thai meatball curry recipe, which we make with a homemade red curry paste recipe, which I prepare with my new KROK mortar and pestle that’s handcrafted in Thailand, but you can use any mortar and pestle, or if you’re tight on time, use a blender, and of course you could use a store-bought Thai red curry paste.

Italian Green Beans Recipe with Crunchy Breadcrumbs and Parmesan Cheese

Our Italian green beans recipe uses a pangrattato of crunchy breadcrumbs and Parmesan cheese to make a fantastic vegetable side dish that is full of fresh flavours courtesy of the just-cooked green beans, lots of texture thanks to the panko breadcrumbs and sesame seeds, and plenty of umami from the balsamic vinegar and Parmigiano Reggiano. Pecorino Romano would also work.

One for the vegetable lovers, this incredibly delicious Italian green beans recipe will make you crisp just-cooked fresh green beans that are given a boost of flavour and texture thanks to the Italian pangrattato of crunchy breadcrumbs and umami courtesy of the Parmigiano Reggiano and balsamic vinegar.

It’s an addictive vegetable side dish that’s fantastic with Mediterranean style braised chicken with olives, a luscious chicken cacciatore, succulent pan-roasted brined pork chops, or some rustic artisanal sausages from your favourite butcher. It’s also a perfect side dish for a great steak or côte de bœuf.

You’ll need to fry the breadcrumbs in extra virgin olive oil (preferably) or a decent quality olive oil in a wok or large skillet over medium heat. I use this round flat bottomed wok for this job and almost everything. Italian cooks use plain breadcrumbs, but we prefer Japanese panko breadcrumbs for extra crunch and texture.

Best Asian Omelette Recipes from Egg Foo Young to Kai Yat Say

This compilation of our best Asian omelette recipes, most of which were published as part of our Weekend Eggs recipe series for egg dishes from around the world, came in at #9 on this list of 10 most popular recipes of February 2023.

The collection includes everything from the classic Chinese egg foo young recipe for a crispy Cantonese omelette that was traditionally filled with char siu pork, spring onions and bean sprouts, to Thailand’s kai yat say recipe for a popular Thai omelette stuffed with minced pork and vegetables

It also features recipes for kai jeow, a spectacular Thai omelette that puffs up and results in a crispy golden-brown omelette, and a soft, fluffy Japanese rolled omelette called tamagoyaki, which is fantastic on a tamago sando or Japanese egg sandwich.

Italian Potato Salad Recipe with Olives, Capers, Anchovies and Rucola

Our Italian potato salad recipe with olives, capers, anchovies and rucola makes a fantastic year-round potato salad with quintessential Mediterranean ingredients. It’s one of our best potato salads, so I was thrilled to see it land at #10 on this list of 10 most popular recipes of February 2023.

It’s one of many Italian potato salads we fell in love with during our travels in Italy, and with those quintessential Mediterranean ingredients it could come from any Mediterranean country.

Although I adore eating this Italian potato salad while it’s still warm – and who doesn’t love a warm potato salad? They’re a fantastic accompaniment to so many winter mains and this German potato salad recipe makes one of my favourite warm potato salads – it’s really a great year-round salad.

You can serve it as a warm potato salad in winter and autumn, allowing the peppery rucola to wilt, or as a cold potato salad in summer and spring, chilling it in the fridge and arranging the arugula leaves just before serving.

Like the Italian green beans recipe, above, this Italian potato salad is the perfect accompaniment to Mediterranean style braised chicken, juicy pan-roasted brined pork chops, chicken cacciatore, or even chicken schnitzel or chicken parma. It would also be fab with côte de bœuf.

If you haven’t visited our site in a while, I sh If you haven’t visited our site in a while, I shared a collection of recipes for homemade edible Christmas gifts — for condiments, hot sauces, chilli oils, a whole array of pickles, spice blends, chilli salt, furakake seasoning, and spicy snacks, such as our Cambodian and Vietnamese roasted peanuts. 

I love giving homemade edibles as gifts as much as I love receiving them. Who wouldn’t appreciate jars filled with their favourite chilli oils, hot sauces, piquant pickles, and spicy peanuts that loved-ones have taken the time to make? 

Aside from the gesture and affordability of gifting homemade edibles, you’re minimising waste. You can use recycled jars or if buying new mason jars or clip-top Kilner jars, you know they’ll get repurposed.

No need for wrapping, just attach some Christmas baubles or tinsel to the lid. I used squares of Cambodian kramas (cotton scarves), which can be repurposed as napkins or drink coasters, and tied a ribbon or two around the lids, and attached last year’s Christmas tree decorations to some.

Our crab omelette recipe was one of our 22 most popular egg recipes of 2022 on our website Grantourismo and it’s no surprise. It’s appeared more times than any other egg recipes on our annual round-ups of most popular recipes since Terence launched Weekend Eggs when we launched Grantourismo in 2010.

I’m late to share this, but a few days ago Angko I’m late to share this, but a few days ago Angkor Archaeological Park, home to stupendous Angkor Wat, pictured, celebrated 30 years of its UNESCO World Heritage listing. 

That’s as good an excuse as any to put this magnificent, sprawling archaeological site on your travel list this year.

While riverside Siem Reap, your base for exploring Angkor is bustling once more, there are still nowhere near the visitors of the last busy high season months of December-January 2018-2019 when there were 290,000 visitors. 

Last month there were just 55,000 visitors and December feels a little quieter. A tour guide friend said there were about 150 people at Angkor Wat for sunrise a few days ago.

The chicken can be marinated for up to 24 hours before cooking, which ensures it’s packed with flavour, then it can be cooked on a barbecue or in a pan.

Terence’s soy ginger chicken recipe is one of our favourite recipes for a quick and easy meal. I love the sound of the sizzling thighs in the pan, and the warming aromas wafting through the apartment.

Who can guess the ingredients and what we’re mak Who can guess the ingredients and what we’re making with my market haul from Psar Samaki in Siem Reap — all for a whopping 10,000 riel (US$2.50)?! 

Birds-eye chillies thrown in for free! They were on my list but the seller I spent most at (5,000 riel!) scooped up a handful and slipped them into my bag. She was my last stop and knew what I was making.

My Khmer is poor, even after all our years in Cambodia, as I don’t learn languages with the ease I did in my 20s, plus I’m mentally exhausted after researching and writing all day. I have a better vocabulary of Old and Middle Khmer than modern Khmer from studying the ancient inscriptions for the Cambodian culinary history component of our cookbook I’m writing.

So when one seller totalled my purchases I thought she said 5,000 riel but she handed back 4,500 riel! The sum total of two huge bunches of herbs and kaffir lime leaves was 500 riel.

Tip: if visiting Siem Reap, use Khmer riel for local shopping. We’ve mainly used riel since the pandemic started— rarely use US$ now as market sellers quote prices in riels, as do local shops and bakeries, and I tip tuk tuk drivers in riels. I find prices quoted in riels are lower.

Psar Samaki is cheaper than Psar Leu, which is cheaper than Psar Chas, as it’s a wholesale market, which means the produce is fresher. I see veggies arriving, piled high in the back of vehicles, with dirt still on them — as I did on this trip. 

The scent of a mountain of incredibly aromatic pineapples offloaded from the back of a dusty ute was so heady they smelt like they’d just been cut. More exotic European style veggies arrive by big trucks in boxes labelled in Vietnamese (from Dalat) and Mandarin (from China), such as beautiful snow-white cauliflower I spotted.

Note: the freshest produce is sold on the dirt road at the back of the market.

My Vietnamese-ish meatballs and rice noodles recip My Vietnamese-ish meatballs and rice noodles recipe makes tender meatballs doused in a delightfully tangy-sweet sauce, sprinkled with crispy fried shallots, with carrot-daikon, crunchy cucumber and fragrant herbs. 

The dish is inspired by bún chả, a Hanoi specialty, but it’s not bún chả. No matter what Google or food bloggers tell you. Names are important, especially when cooking and writing about cuisines not our own.

My meatball noodle bowl is perhaps more closely related to dishes such as a Central Vietnam cousin bún thịt nướng (pork skewers on rice noodles in a bowl) and a Southern relation bún bò Nam Bộ (beef atop rice noodles, sprinkled with fried shallots (Nam Bộ=Southern Vietnam) though neither include meatballs. 

Xíu mại= meatballs although they’re different in flavour to mine, which taste more like bún chả patties. Xíu mại remind me of Southern Italian meatballs in tomato sauce.

In Vietnam’s Mekong Delta, home to millions of Khmer, there’s bánh tằm xíu mại. Bánh tằm=silk worm noodles. They’re topped with meatballs, cucumber, daikon, carrot, fresh herbs, crispy fried onions. Difference: cold noodles doused in a sauce of coconut cream and fish sauce. 

Remove the meatballs, add chopped fried spring rolls and it’s Cambodia’s banh sung, which is a rice noodle salad similar to Vietnam’s bún chả giò :)

I keep getting DMs from pet clothing brands wanting to “partner” with Pepper and send her free cat clothes and cat accessories. Although she did wear a kerchief for a few years in her more adventurous fashion-forward teenage years, I cannot see this cat in clothes now, can you?
