It’s the end of March when we review the month’s stats and share our 10 most popular recipes of March 2022. As I’ve said before, I always find it so fascinating to see what our visitors searched for, read and, we hope, cooked, or at least bookmarked to cook.

My Irish stew recipe for a deeply flavoured classic Irish stew with a rich gravy thanks to an easy roux – and half a bottle of Shiraz – was one of our 10 most popular recipes of March 2022 coming in at #2.

Dishes don’t get more Irish than this traditional Irish stew, considered by many to be Ireland’s national dish, making it the perfect dish to cook for St Patrick’s Day. We used St Paddy’s Day as an excuse to cook Irish food early in the month. Terence made a delicious breakfast colcannon with bacon and eggs for Weekend Eggs and you seriously need to make this.

Mostly made with lamb, historically beef, which was considered ‘winter food’ was used in Irish stews. In A History of Irish Cuisine, Before and After the Potato, Irish academic John Linnane writes that beef, which was typically tough, was cooked in a cauldron for many hours, to make beef stew.

While Terence is the one with Irish ancestry in our little family and Irish stews were part of his mother’s repertoire, I took on Irish stew duties this month as I grew up eating and later cooking Russian stews and I have to confess to having a thing about stews. Have you made my beef stew?

My cabbage roll fried rice recipe makes an incredibly tasty, fragrant fried rice inspired by my Russian grandmother’s cabbage rolls, so I was really delighted to see it land at #3 on the list of our 10 most popular recipes of March 2022.

To the fried onion, garlic, carrot, ground pork, and rice mixture normally ensconced within cabbage leaves, I add shredded cabbage, spices, a little tomato paste, and fresh aromatic dill to make a deliciously addictive fried rice that is my new favourite dish.

My take on the classic Italian tomato sauce recipe makes an incredibly rich tomato sauce that can be served with pasta or meatballs and spread onto pizza bases or parmas. After you make this, you’ll never buy a store-bought jar of ready-made Italian pasta sauce again.

Quick and easy, it tastes like it’s been simmering for hours. The key ingredient: a can of tomatoes. A deliciously rich homemade tomato sauce, it’s based on the traditional Italian tomato pasta sauce made in kitchens all over Italy every single day – with just a few tiny tweaks I explain in the post.

My recipe is very similar to the classic Italian tomato sauce recipe for sugo al pomodoro – the same tomato pasta sauce that our long-time readers might remember Maria, the caretaker of the trullo we stayed at in Alberobello, Puglia, teaching Terence after his lessons in making orecchiette.

Katsudon Recipe for a Japanese Pork Cutlet and Egg Rice Bowl for Weekend Eggs

This katsudon recipe makes a Japanese pork cutlet and egg rice bowl topped with spring onions and scallions. Katsudon is a donburi, a rice bowl meal. Like our oyakodon recipe, another rice bowl dish, katsudon is a delicious, comforting and filling dish that can be eaten out at specialised restaurants or cooked at home and eaten for breakfast, brunch, lunch or dinner.

Our katsudon recipe will make you a crunchy tonkatsu, a Japanese pork cutlet, cooked in eggs and spring onions, served atop a bowl of rice and sprinkled with slices of scallions. ‘Katsudon’ is derived from ‘katsu’, which means ‘cutlet’ – a breaded piece of pounded meat dipped in flour, egg and bread crumbs (in Japanese cooking, it’s panko breadcrumbs) before being fried – in this case, ‘tonkatsu’ (pork cutlet), and ‘don’ from ‘donburi’, Japanese rice bowl.

Our Mexican red chilaquiles recipe with fried eggs for chilaquiles rojos con huevos fritos makes a popular Mexican comfort food eaten for breakfast, brunch, lunch, dinner or supper, and it’s so incredibly delicious. I loved that this made the list of 10 most popular recipes of March 2022.

Invented to make use of stale corn tortillas, chilaquiles is easy to prepare, versatile, and this version is vegetarian. If you’re not familiar with chilaquiles, it’s a dish of homemade tortilla chips, called totopos in Mexico, made from frying stale corn tortillas that are cooked in salsa and served with Mexican cotija and crema.

If you enjoyed our chilaquiles verdes or green chilaquiles with shredded chicken, you’ll love this, too, although I have to confess that when I first fell in love with chilaquiles at retro charmer Café la Blanca in Mexico City back in the mid- to late-1990s it was green chilaquiles I became completely addicted. Oh my, it was so good.

But this Mexican red chilaquiles recipe with fried eggs for chilaquiles rojos con huevos fritos still makes a super-tasty dish and takes me back to Mexico City every time we make it. You be the judge. You can certainly add chicken to these red chilaquiles. And instead of a runny fried egg or two – you could top it with poached eggs or even scrambled eggs. All are acceptable in Mexico and are muy delicioso! (Forgive me, it’s not often I get to use my limited Spanish in Cambodia.)

Slow Fried Egg Recipe with Creamy Dill Spread on Sourdough with Pickles, Radishes and Paprika

This slow fried egg recipe with creamy dill spread on sourdough toast with dill pickles, radishes and sweet paprika is inspired by my late grandfather Ivan’s daily breakfast – an egg, fresh crispy cucumbers and radishes picked from his veggie garden, homemade gherkins, and rye bread, all washed down with black tea with lemon…and a shot of vodka.

Slow fried eggs sit atop a generous layer of dill cream cheese, spread onto thick slices of toasted sourdough, and are served with crunchy gherkins and crisp radishes, drizzled with extra virgin olive oil, and sprinkled with paprika, cracked pepper and sea salt. It was last week’s Weekend Eggs recipe so I was thrilled to see it land on our list of 10 most popular recipes of March.

We suggest using a mandolin to slice the radishes finely if you have one, and if you don’t, highly recommend getting one. We use these adorable little non-stick single-egg pans for slow-frying the fried eggs over the lowest heat for a couple of minutes until the egg is just cooked.

Then we use a silicone spatula to help slide the fried egg out of the pan and on top of the dill cream on toast. The eggs cook quickly – a couple of minutes max – so we don’t bother keeping them warm, but you could pop them under a grill/broiler if you like but keep in mind that the egg will keep cooking, so you may wish to cook the egg even less if you’re like us and are a lover of runny yolks.

Spanish Chorizo and Potato Croquettes Recipe for Croquetas de Patata y Chorizo

This classic Spanish chorizo and potato croquettes recipe for croquetas de patata y chorizo makes a delectable snack with a light crunchy exterior encasing fluffy chorizo-flavoured mash potatoes. They’re a popular tapas bar snack in Spain and are so popular some bars even specialise in croquettes offering a diverse array of fillings.

Classic Cottage Pie Recipe for an Old Fashioned Irish Farmhouse Favourite

This classic cottage pie recipe makes the traditional Irish comfort food dish that’s synonymous with hearty, rustic, Irish farmhouse cooking, which has become a much-loved culinary genre of Irish cooking in recent decades, embracing some of the most quintessential Irish dishes, such as a traditional Irish stew.

Endearingly old fashioned, this Irish comfort food favourite consists of layers of savoury beef mince and vegetables, and cheesy mashed potatoes, which are baked, and served with buttery green peas. It’s best washed down with red wine or Guinness and it was another recipe that we shared for St Patrick’s Day and was yet another of our 10 most popular recipes of March 2022.

Of course, it must be said – before someone leaves a comment about how cottage pie is not only Irish and also is made in the UK, Australia, New Zealand, and so on – that, yes, it’s true, cottage pie is not confined to Ireland, we also grew up eating both cottage pie and shepherd’s pie in Australia. Which is why we’re sharing this recipe. (Insert smiling emoji.)

So what is the difference between cottage pie and shepherd’s pie? Because, bewilderingly, there’s a fair bit of confusion about this out there on food sites and food blogs, even though the distinction is very clear: cottage pie is made with beef mince and shepherd’s pie made with lamb mince, which should be evident because shepherds herd sheep not cows. (Insert another smiling emoji; the one with gritted teeth.)

Taco Tuesday Recipes – Chicken Tinga Tacos, Tacos Al Pastor, Breakfast Tacos and More

Our Taco Tuesday recipes collection includes everything from a tacos al pastor recipe inspired by the tacos we loved at Mexico City’s Salón Corona to more Mexican-American and Tex-Mex-style tacos from a chicken tinga taco recipe to Austin-inspired breakfast tacos. Not since Laksa Thursday have I looked forward to a weekly ‘food day of the week’ more than #TacoTuesday.

And I have some good news! Because in a world of plagues, floods and wars we all need a little good news, even if it’s only food news: we have corn tortillas! Yes, corn! Until now it’s been impossible to source quality corn tortillas here in Cambodia – only wheat flour tortillas or the crunchy Tex-Mex taco shells – or the masa harina or tortilla press we need to make tortillas ourselves.

But they’re actually a hybrid, a corn and wheat flour mix. But that’s as close as we can get for now so I’m still celebrating. I texted our Siem Reap supermarket owner a variety of emojis – applause, hearts, champagne bottles etc – then encouraged begged her to continue to try to source corn tortillas for us from wherever she found these. Fingers crossed.

Of course, that means that without authentic corn tortillas, aside from our tacos al pastor recipe, our Taco Tuesday recipes make tacos that are actually something of a fusion of Mexican, Mexican-American and Tex-Mex-styles of tacos. That’s not to say they’re inauthentic.

Wheat flour tortillas are used to make tacos in Mexico, mostly in the northern Mexican states that border the USA, as well as the southern USA Borderlands that were part of Mexico not all that long ago. Wheat flour tortillas are also used by Mexican-Americans.
