My Southeast Asian breakfast salad recipe with jammy soft boiled eggs makes a bacon, lettuce and tomato breakfast salad drizzled in a quintessential Southeast Asian dressing, topped with soft boiled eggs, and sprinkled with fresh fragrant coriander and crispy fried shallots.

This Southeast Asian inspired BLT breakfast salad, which we shared for Weekend Eggs, our series on quintessential eggs dishes from around the world, makes a fantastic shared breakfast, brunch or lunch that’s perfect for sultry weekend mornings, and it’s another of our best recipes with bacon.

If you enjoyed my more European style breakfast salad recipe – also inspired by the BLT or bacon, lettuce and tomato sandwich, as well as my late grandfather Ivan’s simple breakfast of a boiled egg, raw garlic, cucumber, tomato, and pickles – then you’re going to enjoy this, too.

Bacon and Eggs Breakfast Congee Recipe for a Comforting East-West Savoury Rice Porridge

Our hearty bacon and eggs breakfast congee recipe was another of our Weekend Eggs recipes and it’s another of our best bacon recipes.

It makes a comforting East-West savoury rice porridge that’s inspired partly by the classic Australian breakfast of bacon and eggs with sautéed mushrooms, and partly by Chinese and Southeast breakfast porridges with pork and boiled eggs.

Breakfast porridges, both savoury and sweet, are, like other rice dishes, eaten right around the world. Porridges are not only made with rice, of course, but with oats, buckwheat, barley, maize, mung beans, millets, oats, semolina, and sorghum.

Although rice porridges are the most widely consumed porridge, eaten everywhere from Europe and the Middle East to Asia. Porridges are also not only eaten for breakfast, but for brunch and lunch, a warming winter dinner, as a sweet dessert, a late-night supper to stave off a hangover, or simple when we’re ill and in need of nourishment.

Our bacon and eggs breakfast congee recipe was created partly as a result of lockdown boredom and partly a result of nostalgia – which explained a lot of our pandemic, from our classic Australian café-style avocado toast with poached eggs to my avocado pasta, both of which would be elevated by bacon!

Irish Colcannon Recipe with Fried Egg and Crispy Bacon

This Irish colcannon recipe with fried egg and crispy bacon makes an Irish breakfast colcannon – or brunch colcannon if you prefer – and it’s yet another of our best recipes with bacon.

It makes a deliciously-rich traditional Irish colcannon dish of mashed potatoes with butter, milk, cabbage, spring onions, and bacon, and we top the colcannon with a fried egg and crispy bacon.

We’re calling this Irish colcannon with fried eggs and crispy bacon an Irish breakfast colcannon – or Irish brunch colcannon if you reckon it’s too heavy for breakfast. Or it could serve as a breakfast for dinner dish, because with the world turned upside down who really cares what we eat when?

Our thinking is that if we can have breakfast tacos, breakfast salads, breakfast congees, and savoury breakfast porridges simply by adding bacon and eggs, then why not breakfast colcannon with fried eggs and crispy bacon? Because bacon makes everything better.

Russian Buckwheat Kasha Recipe with Bacon, Caramelised Onions, Mushrooms and Eggs

This comforting Russian buckwheat kasha recipe with caramelised onions, bacon lardons, pan-fried mushrooms, and soft-boiled eggs makes my hearty take on one of my baboushka’s traditional Russian-Ukrainian breakfasts.

Buckwheat groats or grechka is the key ingredient of this kasha, a savoury porridge that I serve with a dollop of sour cream and plenty of fragrant dill. Despite the rustic appearance, it is perhaps the least traditional of all my Russian family recipes but it’s one of my favourite buckwheat recipes and one of our best bacon recipes.

I have to confess that of all the traditional Russian breakfasts my baboushka used to make, kasha was not one of my favourite breakfasts as a child. While I happily tucked into Baba’s French toast, blini, potato cakes, and buckwheat pancakes, I politely resisted her offer of kasha if I could without insulting her.

As a little kid, it was the strange smell that put me off more than the nutty taste of the ancient grain, and it wasn’t until I was a young adult going to university and visiting my grandparents for overnight stays that I finally got kasha. It’s addictive with caramelised onions, fried mushrooms, and soft eggs, and bacon.

Breakfast Salad Recipe with Soft Boiled Eggs, Bacon, Avocado, Sautéed Mushrooms, and Pickles

Our best breakfast salad recipe makes a healthy-ish breakfast salad with soft boiled eggs, avocado, crispy bacon, mushrooms sautéed in the bacon juices, crunchy lettuce, sweet cherry tomatoes, and bright tangy pickles.

It’s for those of you who can’t decide between a healthy breakfast or comforting bacon and eggs, and who doesn’t love a deliciously filling breakfast salad?

Guilt-free bacon, eggs and mushrooms – and crispy bacon and mushrooms sautéed in bacon juices at that! – lightened up in a fresh fragrant salad, made all the healthier with zingy pickles, which are so good for our gut-health.

A tip: fry the bacon in your favourite pan until it’s half-done to your liking, then mid-way through set the bacon pieces aside and tilt your pan so the bacon juices slide to one side, then fry the mushrooms in the bacon juices. I dare you to resist sneaking a few pieces! Yum.

German Potato Salad Recipe for a Warm Potato Salad with Bacon, Celery and Scallions

This German potato salad recipe makes a warm potato salad – also called a hot German potato salad – with a dressing of fried celery, scallions or spring onions, and bacon, and it’s another of our best bacon recipes.

Time things right and you can deliver the potato salad hot to the table in autumn or fall or winter or serve it warm or at room temperature in spring or summer. It’s a perfect side to chicken schnitzel or our chicken schnitzel burger and is even better with a side of coleslaw.

You’re going to love this German potato salad recipe if you’re a lover or potato salads, especially warm potato salads, such as my Mediterranean-style warm potato salad recipe with capers, anchovies, chives, and celery leaves.

I’ve only made a few tweaks to the classic German potato salad dressing: I’ve fried the bacon in olive oil, so I have more bacon oil for the dressing, and added a little ground paprika for warmth and a tiny amount of turmeric for colour.

A lot of traditional recipes call for Dijon mustard or another yellow mustard but I love the added texture and tang of wholegrain mustard. Use whichever you prefer.

Japanese Fried Rice Recipe for Yakimeshi with Bacon, Egg and Cabbage

This Japanese fried rice recipe for yakimeshi with bacon and egg makes my take on the classic Japanese fried rice made with scrambled egg and bacon or ham, and it’s one of our best recipes with bacon.

While bacon is essential in Japanese fried rice, I’ve added shredded cabbage, sesame seeds and roasted seaweed to give the fried rice greater texture, along with quintessential Japanese ingredients, such as soy sauce, rice vinegar, mirin, sesame oil, and shichimi togarashi Japanese seven spice to intensify the flavour.

I strongly recommend steaming your Japanese rice in a rice cooker rather than boiling it on the stove and then you can fry the bacon in the wok that you’re going to fry the rice in. We use this round flat bottomed wok, which is non-stick and light-weight.

Korean Spicy Noodles Recipe for Stir-Fried Udon with Kimchi, Bacon and Fried Eggs

This Korean spicy noodles recipe makes stir-fried udon noodles with kimchi, bacon and fried eggs, and it’s easily another of our best bacon recipes.

While the Japanese fried udon noodle dish, yaki udon, has a soy based sauce, this Korean-style yaki udon heats things up with kimchi, the spicy Korean chilli paste called gochujang and Korean chilli flakes, gochugaru. We add fried eggs and bacon.

And it’s definitely a dish for pork lovers, as much as lovers of noodles and spice. Although if bacon and ground pork is too much pork, omit one.

You’ll need spicy Korean kimchi fermented cabbage, the spicy Korean chilli paste called gochujang, and the Korean chilli flakes called gochugaru. We can buy these from our local supermarket, but otherwise try a specialist Asian market or, as you can see from our links, Amazon has them in stock.

Braised Cabbage Recipe with Bacon for a Rich Savoury Side Dish to Almost Any Main

Our braised cabbage recipe with bacon makes a rich savoury side to almost any main course. It’s one of my favourite cabbage recipes and is another of our best recipes with bacon.

It will make you an incredibly rich and delicious savoury side dish that is a splendid accompaniment to so many mains. such as kotleti (chicken meat patties), chicken Kiev, beef Stroganoff, and Russian meatballs.

My baboushka typically served this traditional Russian-Ukrainian dish as one of an array of plates that were shared family-style for Sunday lunches and holiday feasts.

At a bare minimum the table would be spread with dishes of piroshki (hand pies), beetroot and potato salad, a classic garden salad and casserole pots of Russian pelmeni and potato vareniki.

This braised cabbage and bacon dish was often served as an alternative to stuffed cabbage rolls, as you can only have so much cabbage in one sitting. But you can never have too much bacon.

Chicken Schnitzel Burger Recipe with Creamy Pickle Mayo and Bacon, Cabbage and Tomato

This chicken schnitzel burger recipe will make you our crunchy chicken schnitzel with panko breadcrumbs, parmesan and lemon zest, spread with creamy pickle mayo, and topped with bacon, cabbage and tomato between soft burger buns. Served with spicy potato wedges, it is home-cooked fast food at its finest.

When we finally bit the bullet and made chicken schnitzel for the first time in more than 25 years during a bout of homesickness, we were very pleasantly surprised. Served with my warm potato salad recipe with anchovies, capers, chives and celery leaves, it was damn good.

It was so good that we made it a couple of times for “testing purposes” using both shallow and deep frying. Crispy on the outside and moist and flavourful to bite into, the chicken schnitzel and potato salad made a very hearty and yet simple dish.
