This quick and easy French toast recipe makes old-fashioned French toast – stale bread dipped into whisked eggs and fried in butter until golden brown. We serve it with a berry sauce, made in minutes with fresh or frozen berries and jam, dollops of cream or sour cream, and sifted icing sugar. It makes a simple, sweet weekend breakfast or dessert.

This easy French toast recipe makes my go-to snack when we have stale bread to use up, no shortage of eggs, but I’m short on time – as it takes just minutes to make, it’s delicious, it’s filling, and I can make savoury French toast for breakfast or lunch or sweet French toast when I need a hit of sugar in the late afternoon.

I’ll make this fancier recipe for a savoury French toast with cherry tomatoes, feta and fresh dill for a weekend brunch, when I’ll use a fresh, thick, soft white bread, and beat the eggs with milk. But when I want a super-quick snack this easy French toast recipe is my go-to and when I’m craving something sweet and there are frozen berries in the freezer, this is what I’ll make.

This easy French toast recipe is so quick and simple it really doesn’t need a recipe, unless you’re making it for the first time. Traditionally, to make French toast you beat milk with the eggs and soak the bread for longer, and you’ll season that mixture, which is what I’d do if I was making French toast for guests for a weekend brunch.

But this is the simple snack version you can make for yourself when you want something more than an egg on toast and need a sugar hit. Just a few tips to making this easy French toast recipe with mixed berries and whipped cream (or sour cream, which is my preference), as it’s a cinch to make and comes together quickly.

Tips to Making this Easy French Toast Recipe with Mixed Berries and Whipped Cream

I only a few tips to making this easy French toast recipe with mixed berries and whipped cream as it’s super simple and can be made in minutes.

First, I make the mixed berry sauce with some frozen berries, a little sugar and water. I’ve noticed some call this kind of quick and easy berry sauce a compote, but it’s not.

My grandmother made compotes whenever she had an excess of fruit to use up or we drove up to the Blue Mountains and my grandparents bought some fruit in bulk and a proper compote is made slowly. I’ll share a recipe soon.

This is a super fast sauce made from frozen mixed berries – although you could always use fresh berries – with a little jam, hot water and sugar, over medium-high heat, and it’s done in a couple of minutes. When it’s ready, turn off the heat and set it aside.

Now everything comes together quickly from hereon, so you need to work fast. Whisk the eggs and pour half into a dish or container large enough to hold the slices of bread.

Dip one slice of bread into the container, turn it over, ensure that it’s covered in egg, lift it up, dip the other slice in, turn it over, then pop the other slice of bread on top. There’s no need to soak it for long for this quick and easy French toast recipe.

Next, you need to fry your French toast. I use a frying pan that’s big enough to hold two slices of bread and I heat two teaspoons of butter in it over medium heat. I then use a wide spatula or fish slice to lift each slice of bread out of the egg and into the frying pan.

I fry the bread slices first on one side until golden brown, then turn the slices over, pressing down on the bread lightly with the spatula, and fry the other sides until golden brown. This takes a minute or two minutes max depending on your heat.

I then slide the slices out of the pan, transfer them to a plate, and repeat with the other slices. It’s as easy as that. And sometimes that’s all I do if I’m making a simple snack. But we’re not today…

Lastly, I scoop the berries and sauce out of the pot and onto the toast, add some dollops of fresh cream, whipped cream or sour cream, depending on whether I’m in the mood for sweet or sour, and I use a hand-held sifter (to prevent lumps) to sprinkle icing sugar onto the plates.

Ingredients
  

  • 2 tbsp mixed berries - frozen or fresh
  • 1 tbsp berry jam – strawberries - raspberries, cherry etc all work
  • 2 tbsp hot water
  • ½ tsp white sugar
  • 2 eggs
  • 4 tsp butter
  • 4 stale white bread slices
  • 2 dollops of whipped cream - thickened cream or sour cream
  • 1 tsp icing sugar

Instructions
 

  • To a small pot over medium-high heat, transfer the mixed berries, jam, hot water and sugar, and stir constantly for a couple of minutes until you have a berry sauce, then turn off the heat and set aside.
