This collection of 31 winter recipes to cook in August, which we pulled together for our readers in the southern hemisphere, was another of the most popular recipe posts of August.
Our winter recipe round-up featured a recipe for every day of August, including everything from warming soups and hearty stews to conforming pastas and spicy curries.
We also published a compilation of 31 summer recipes to make in August, the summer edition, aimed at our readers in the sunny northern hemisphere – which included homemade dips for crackers, fresh spring rolls, cold summer soups, and crunchy salads, for starters.

It’s no surprise, as while chicken breast meat might not be as delicious or as succulent as brown chicken meat, it’s healthy, versatile and affordable, and poaching it in aromatics adds lovely subtle flavours.
We typically shred our poached chicken breasts, which keep in the fridge for a few days, and we use the shredded chicken meat in everything from chicken rice porridges and chicken rice soups to shredded chicken salads, tacos and sandwiches.

Our bang bang chicken salad recipe is inspired by the classic Chinese bang bang chicken dish, and while we only shared it yesterday, it quickly became one of our most popular recipes of August. Crisp lettuce, crunchy cucumbers and fresh fragrant coriander transform the dish into a lovely light yet filling salad.
Terence’s bang bang chicken salad recipe is based on one of our all-time favourite Chinese dishes, the classic Sichuan bang bang chicken. A Sichuanese specialty of cold succulent chicken served swimming in a deliciously addictive sauce, made with Chinese sesame paste and a delightfully hot and numbing homemade chilli oil.
We first sampled it at a Sichuan restaurant in Hong Kong many years ago, then in China a week later, where we became addicted to it, but it was in Australia of all places that we fell in love with it and Terence has been making it ever since.
It was while testing other poached chicken breast recipes (see above) that the idea of transforming the delightfully tongue-tingling, spice-laden bang bang chicken into a lighter yet still filling salad came to Terence, and it’s been on repeat for lunch and summer dinners ever since.
A tip: If the chicken breasts are of very uneven thickness, it might pay to wrap them in cling film and flatten them a little using a kitchen mallet.
