Basa Gede or Balinese Sauce is the base spice mix for Balinese saté and marinade for the chicken dish ayam be tutu. Original recipe by Desak the chef in Bali.

Ingredients

  • 18 shallots peeled and roughly chopped
  • 6 cloves garlic peeled and crushed a little
  • 3 stalks lemongrass chopped roughly
  • 3 Indonesian bay leaves dried
  • 6 candlenuts
  • 2 inches ginger peeled and roughly chopped
  • 3 inches fresh turmeric peeled and roughly chopped
  • 3 inches kencur peeled and roughly chopped
  • 5 red chillies medium sized
  • 1 tsp peppercorns
  • 1 tsp coriander seeds
  • 1 tsp shrimp paste

Instructions

  • Get that pestle moving, grind the ingredients from hardest to softest.
  • Add a little neutral oil to help moisten the mixture if necessary.
  • The final mixture should not have any identifiable pieces of any ingredient.
