Watermelon Mint Cooler Recipe – A Refreshing Cocktail For a Warm Day
This watermelon mint cooler recipe is super easy to mix and makes for a refreshing light cocktail to drink on a stifling summer afternoon or a sticky day in the tropics.
Servings: 6 Cocktails
- 500 g watermelon
- ½ cup / 125ml coconut water
- 3 cups / 750ml Champagne / sparkling wine
- 6 ice cubes
- Fresh mint leaves
Scoop out chunks of watermelon including juice, poke out seeds, pop the pieces and any watermelon juice into the blender.
Add the ice and pour coconut water into the blender – fresh is best but store-bought works too.
Blend until frothy and smooth, strain, and pour into six large wine glasses or champagne flutes.
Fill with sparkling white wine or Champagne and garnish with mint.
While this watermelon mint cooler recipe is delicious as it is, it’s a recipe that is adapted easily. Leave out the bubbly and top the drink with sparkling mineral water instead and you have a healthy thirst-quenching mocktail. Skip the bubbles entirely and pour into ice-block moulds to create healthy popsicles. You can also throw chopped mint into the blender.
Looking for a headier cocktail, skip the coconut water, and replace the sparkling wine or Champagne with vodka, gin, white rum, or tequila, which can also go in the blender. Whatever you do, garnish with fresh mint for extra zing.
