Dragon Fruit Smoothie Recipe

Our easy red dragon fruit smoothie recipe makes an incredibly creamy dragon fruit shake that is not only a feast for the eyes but is as delicious as it is healthy and nutritious. Dragon fruit is rich in antioxidants, vitamins and minerals, low in calories, and high in fibre. When dragon fruit is in season, buy as much as the fruit as you can get, and freeze the flesh to have on hand, so you can make these healthy smoothies.

Ingredients

  • 1 fresh red dragon fruit diced and frozen
  • 2 tbsp creamy Greek-style yoghurt
  • 150 ml cold milk
  • 1 tsp sugar

Instructions

  • Slice the tip off the dragon fruit and peel off the skin, which should come away easily, then slice and dice the flesh, and freeze overnight in an air-tight container.
  • Add the frozen dragon fruit pieces, yoghurt, cold milk, and sugar to a blender or juicer, and blend for a couple of minutes until smooth, thick and creamy.
  • Pour into chilled glasses and garnish with fresh mint.
